Microgreens rank among the simplest, smallest, and yet most nutritious and delicious plants you can grow in the garden. They are the young, delicate greens that grow from the seeds of various vegetables and herbs. Different types of microgreens will give you different vitamins, minerals and nutrients. But, in general, they are a great source of vitamin A, E, C and K, and minerals such as calcium, magnesium, iron, selenium and zinc.
The nutrients in microgreens are more concentrated than in their fully grown counterparts:
A cup of red cabbage microgreens has 3 times more folate than the mature red cabbage
A cup of arugula microgreens has 100% more vitamin A than arugula
Radish microgreens have double the amount of calcium and are higher in omega 3s than radishes
Compared to broccoli, broccoli microgreens have a higher content of the antioxidant sulforaphane, which helps lower fasting blood glucose levels and can protect against heart disease and cancer.

Microgreens taste great! And there are so many to choose from that you can almost certainly find a microgreen that you like. If you like spicy or more flavorful microgreens, radish or arugula are great choices. Some varieties of mustard microgreens taste like wasabi or horseradish. Pea shoots taste like young snow pea pods, broccoli have a slightly bitter taste, thanks to sulforaphane in them. Start trying and find your favorite!!
Add them to your salads or wraps for some extra crunch. They are great blended into smoothies and juices as well. You can sprinkle some on a garnish in almost any dish. Try them on top of pizzas, soups, curries, omelets, stir fries, pasta and other hot dishes. Combine a few different types and you have a colorful and tasty salad that is full of nutrition all on its own!!
